Loire valley winesThe Quincy vineyard extends on the left bank of the Cher, not far from Bourges. Wine-growing plateaus situated at an altitude of 125 m, covered with sand and old gravel, are part of a country with hardly marked relief. Quincy produces white Sauvignon Blanc wines, which are distinguished by the freshness and precision of their aromas.

Vinification
I select my grapes from vines planted in gravel and Kimmeridgian marls in the Quincy appellation. I taste the fruit regularly in the days leading up to the harvests in order to ensure they are picked at optimum levels of ripeness. The vinification stage is completed by fermentation at controlled temperatures of l6-18°C.

Color:
Pale golden hue and bright core.
Nose :
The expressive nose discloses citrus zest, quince and pear.
Palate:
The palate is silky smooth and underpinned by a pleasant acidity and delicate bitterness. Notes of fresh apple and white stone fruits give way to a hint of almond. The finish is long, silky smooth and elongated by exotic aromas such as candied pineapple.
Serving temperature
8 - 10 °C.

A pear and goats cheese tart, cheeses such as Ossau-Iraty or a pea flan.
